    Chocolate Chip Banana Bread with Streusel Topping

    I know there are millions of banana bread recipes out there, but this Chocolate Chip Banana Bread recipe is the one I keep coming back to. The key is letting your bananas get super dark and over ripe (like on the verge of rotting). That way they are very sweet and almost caramelized. I like using semi sweet chocolate chips for this recipe because the slight bitterness of the chips offsets the sweet sugary streusel topping. Pour yourself a cup of coffee and enjoy this moist and delicious banana bread for breakfast or afternoon pick me up.

    How do you make Chocolate Chip Banana Bread with Streusel Topping?

    Preheat your oven to 350 degrees and mix together the flour, baking soda and and set aside. Mash up 3 - 4 overripe bananas and sugar together then add the beaten eggs and melted butter.

    Dump the dry ingredients into the wet and mix thoroughly, toss in the chocolate chips and pour the batter in a loaf pan.

    Mix together the streusel ingredients and sprinkle on top of the batter. I like to grate the cold butter to make it easier to mix.

    Bake for 60 - 65 minutes and enjoy with a pad of butter!

    If you want to make this recipe even easier, you can skip the streusel topping and just sprinkle granulated sugar on top before putting it into the oven. Also, you can easily turn this recipe into muffins. Just fill each muffin tin about 3/4 of the way to the top and add your streusel topping. I would check the muffins after 30 minutes to check for doneness.

    Description

    This Chocolate Chip Banana Bread with Streusel Topping is has amazing banana flavor, is not too sweet and is perfectly moist.


    Ingredients

    Scale
    • 2 cups flour
    • 1 teaspoon baking soda
    • 1/2 teaspoon salt
    • 1 1/2 cup over ripe bananas, about 3 - 4 bananas
    • 3/4 cup brown sugar
    • 2 eggs
    • 1/2 cup butter, melted and cooled
    • 1 cup semi sweet chocolate chips

    Streusel Topping:

    • 1/4 cup brown sugar
    • 1/4 cup sugar
    • 1/4 cup flour
    • 3 Tablespoons cold butter, grated or cut into small cubes


    Instructions

    1. Preheat the oven to 350 degrees.
    2. Mix together the flour, baking soda and salt and set aside.
    3. Mash up the bananas and sugar together, then add the beaten eggs and melted butter.
    4. Dump the dry ingredients into the wet and mix thoroughly, toss in the chocolate chips and pour the batter in a loaf pan.
    5. Mix together the streusel ingredients and sprinkle on top of the batter.
    6. Bake for 60 - 65 minutes.

      This was good, but it needs vanilla. Felt like it’s missing something and vanilla is what it needs.
