    This savory copycat Starbucks egg bites recipe is a perfect grab and go breakfast for those busy mornings. The combination of the bacon and the gruyere (a hard Swiss cheese perfect for melting) is utterly delicious but feel free to use a regular Swiss cheese, Monterey Jack cheese, or even cheddar if you like. These egg bites are packed with protein and will keep you full for hours. You could even make a sandwich with them between a hearty wheat english muffin.

    Wondering how to make Starbucks egg bites without a sous vide machine?

    Cooking these egg bites in the oven is very delicious and easy. You can use a water bath cooking technic, used to keep cheese cakes from cracking, to keep these bite pillowy soft. All you do is fill an oven safe shallow dish with about an inch of water and keep it in the oven while it preheats and while the egg bites cook. The steam from the water bath will cook the eggs gently and keep the edges from getting too brown.

    Are these egg bites gluten free?

    Yes! There is no wheat included in this recipe and you are safe from cross contamination since you are making them at home (not like the ones from Starbucks).

    Can you freeze egg bites?

    Technically yes, you could freeze them and microwave them for around one and a half minutes to reheat. The texture of egg can get spongy when they are frozen. The flavor is still amazing though, so if texture doesn't bother you, go for it! I find them optimal refrigerated and enjoyed for up to four days which makes them perfect for meal prepping.

    These Bacon and Gruyere Egg Bites are a copycat of the Starbucks egg bites recipe without the sous vide equipment!


    Ingredients

    Units Scale
    • 1/2 lb bacon, cooked
    • 10 eggs
    • 1/3 cup cottage cheese
    • 1 cup gruyere cheese, shredded | sub Swiss cheese, Monterey Jack or cheddar
    • 1/2 cup Monterey Jack cheese, shredded
    • 4 - 6 dashes hot sauce
    • 1/4 teaspoon Kosher salt

    Instructions

    1. Fill an oven safe dish with about an inch of water, place on the bottom rack of the oven and preheat to 350 degrees.
    2. Mix together all the ingredients and distribute evenly in a lined 12 cup muffin tin.
    3. Bake for 20 - 25 minutes or until the egg is set and firm.

    Notes

    I like lining my muffin tins to prevent the egg bites from sticking to the tins. Another option would be to use a silicone muffin tin.
