It's bright, fresh, and tangy with just enough richness from the olive oil. Keep a jar in the refrigerator for easy Greek salads, grain bowls, roasted vegetables, or as a simple marinade for chicken. Once you start making homemade salad dressings, you'll wonder why you ever bought store-bought dressings.

Why You'll Love This Greek Salad Dressing

    • A flavorful dressing made with simple pantry ingredients.
    • Ready in 5 minutes
    • No preservatives or unnecessary ingredients
    • Better flavor than most bottled dressings
    • Great on salads, vegetables, chicken, and pasta salads

Homemade salad dressings always seemed like something that would take a lot more effort than they were worth. Then one day I finally made one, and I haven't looked back. It turns out all you really need is a good ratio of oil to acid, a few seasonings, and a jar to shake it all together.

What surprised me most wasn't how easy it was, but how much better it tasted. Fresh garlic, good olive oil, real lemon juice… they make a huge difference. I also like knowing exactly what's in it. Instead of preservatives or added ingredients, I'm getting healthy fats from olive oil and fresh ingredients that add both flavor and nutrition.

This Greek salad dressing is the version we keep coming back to. We like our dressings just a little sweet, so I add a spoonful of honey, but you can absolutely leave it out if you prefer a more classic, tangy Greek dressing.

    Happy cooking,

    Ingredients You'll Need

Extra Virgin Olive Oil - The base of the dressing. Use a good-quality olive oil since it's the main flavor.

White Wine Vinegar - Lighter and slightly more delicate than red wine vinegar, it gives the dressing a clean, fresh flavor. You can sub red wine vinegar or apple cider vinegar in a pinch.

Fresh Lemon Juice - Brightens everything and balances the vinegar. If you don't have a lemon, you can add more vinegar.

Honey - Just a small amount rounds out the acidity without making the dressing sweet.

Dijon Mustard - Helps emulsify the dressing so it stays together while adding subtle depth.

Fresh Garlic, optional - Fresh garlic gives this homemade dressing its bold, savory flavor. If you're in a pinch, you can substitute garlic powder, although fresh garlic provides the best flavor.

Dried Oregano - The classic herb in almost every Greek dressing.

Kosher Salt - Enhances all the flavors.

Black Pepper - Freshly cracked pepper adds a little warmth.

How to Make Greek Salad Dressing

Add all ingredients to a mason jar or small bowl. Shake vigorously or whisk until fully combined. Taste and adjust seasoning if needed. Refrigerate until ready to use. Shake again before serving since homemade dressings naturally separate.

Store in an airtight mason jar or container in the refrigerator for up to one week.

Homemade Greek salad dressing made with olive oil, white wine vinegar, lemon juice, honey, and oregano. This easy homemade dressing comes together in 5 minutes and is perfect for Greek salads, pasta salads, vegetables, and chicken marinades.

    Ingredients

    Units Scale
    • 1/2 cup extra virgin olive oil
    • 1/4 cup white wine vinegar
    • 2 tablespoons fresh lemon juice
    • 1 fresh garlic clove, minced - optional
    • 1 teaspoon Dijon mustard
    • 1 tablespoon honey
    • 1 teaspoon dried oregano
    • 1/2 teaspoon kosher salt
    • 1/4 teaspoon black pepper

    Instructions

    1. Add the olive oil, white wine vinegar, lemon juice, honey, Dijon mustard, garlic, oregano, salt, and black pepper to a mason jar with a lid or a small bowl.
    2. Shake the jar vigorously (or whisk until smooth) until the dressing is well combined and emulsified.
    3. Taste and adjust the seasoning, adding more salt, pepper, honey, or lemon juice if desired.
    4. Serve immediately over your favorite salad, or refrigerate until ready to use.

    Notes

Store in an airtight container in the refrigerator for up to 1 week. Shake well before each use, as the dressing will naturally separate. If the olive oil solidifies in the refrigerator, let it sit at room temperature for 15 to 20 minutes before shaking again.

Yes. Greek salad dressing is a type of vinaigrette made with olive oil and vinegar, typically flavored with oregano, garlic, and lemon.

Can I make Greek salad dressing ahead of time?

Absolutely. In fact, it tastes even better after the flavors have had time to blend.

Why does homemade Greek dressing separate?
