    Kale and Mushroom Egg Bites

    These Kale and Mushroom Egg Bites are a copycat of the Starbucks egg bites recipe without the sous vide equipment!

    These vegetarian egg bites are great for a grab and go breakfast or a high protein snack. They are surprisingly easy to make and will cost way less than getting the ones at Starbucks.

    What ingredients are in Starbucks Copycat Kale and Mushroom Egg Bites?

    The most surprising ingredient in the easy egg bites is cottage cheese. I love it though because it adds extra protein and give a silky texture to the egg bites. Another interesting ingredient is a couple dashes of hot sauce. Now the hot sauce doesn't make these spicy, it just adds some much needed brightness that compliments the other flavors. The rest of the ingredients are eggs, Monterey jack cheese, mushrooms and kale.

    How do you make egg bites without a sous vide?

    I actually find cooking these egg bites in the oven to be very delicious. I stole a cooking technic used to make cheese cakes from cracking to keep these bite pillowy soft. All you have to do is place a water bath in the oven alongside them. Fill an oven safe shallow dish with about an inch of water and keep it in the oven while it preheats and while the egg bites cook. The steam from the water bath cooks the eggs gently and keeps the edges from getting too browned.

    Are these copycat Starbucks egg bites gluten free?

    Yes! There is no wheat included in this recipe and you are safe from cross contamination since you are making them at home (not like the one's from Starbucks).

    Can you freeze egg bites?

    Technically yes, you could freeze them and microwave them for around one and a half minutes to reheat. However, the texture does become pretty spongy after they are frozen which is not my favorite. The flavor is still amazing though, so if texture doesn't bother you, go for it! I find them optimal refrigerated and enjoyed for up to four days which makes them perfect for meal prepping.

    Description

    These Kale and Mushroom Egg Bites are a copycat of the Starbucks Egg Bites without the sous vide equipment!


    Ingredients

    Units Scale
    • 8 ounces mushrooms, any variety, chopped fine
    • 2 cups kale, chopped fine
    • 1 tablespoon olive oil
    • 1 1/2 cups shredded cheese, Monterey Jack and Swiss for the original Starbucks recipe or any blend you have on hand
    • 8 eggs
    • 1/3 cup cottage cheese, small curd
    • 1-2 dashes hot sauce
    • 1/4 teaspoon kosher salt

    Instructions

    1. Fill an oven safe dish with roughly an inch of water, place on the bottom rack of your oven and preheat the oven to 350 degrees. 
    2. Sauté the mushrooms and kale in one tablespoon of olive oil in over medium heat until the mushrooms have softened and the kale has wilted a little then let cool a bit.
    3. In a mixing bowl blend together the shredded cheese and vegetables, then disperse them evenly between 12 muffin tins.
    4. Whisk together the eggs, cottage cheese, hot sauce and salt, then poor an equal amount into each muffin tin. 
    5. Bake the muffins for 20 - 25 minutes, until the center is set and not jiggly, on the middle rack.
