    Chocolate Chip Banana Bran Muffins

    Lately we've been in need of a lot of grab and go type meals and these Chocolate Chip Banana Bran Muffins have been great as a quick breakfast, healthy snack or even a sweet treat at the end of the day. There are probably healthier versions of a bran muffin, but in my house no one will eat them if I make them too healthy (hence the chocolate chips). It's about balance right?

    How do you make Chocolate Chip Banana Bran Muffins?

    I won't lie, baking is not my favorite thing to do, but I do enjoy the happiness baked goods bring my family. This recipe does have a kind of long ingredient list, but it's all pantry staples you probably have (and are about to expire in my case).

    1. Start by mashing up that very brown banana that you've been meaning to use in the fruit bowl the past week.
    2. Mix in some brown sugar, oil, an egg, and some vanilla extract. Stir together your dry ingredients, flour, baking soda, baking powder and salt, then add the wet to the dry and mix until just incorporated.
    3. Add in as many chocolate chips as your like and divide the batter evenly into 12-cup muffin tin, preferably lined for less mess.
    4. Bake at 375 for 15 - 20 minutes.

    Why do we mix the wet and dry separately when you could just dump everything in one bowl?

    Trust me, I get it. I hate dirtying up extra dishes, but mixing them separate prevents us from accidently over mixing and making tough muffins.

    Can you freeze these muffins?

    Absolutely! After they bake and cool off transfer them to whatever freezer friendly container you like to use. To reheat, I just pop them in the microwave for a few seconds.

    What are some healthier swaps?

    If you are looking to swap out some ingredients for healthier one, I might suggest adding in some ground flax seed or swapping the chocolate chips for raisins or cranberries. For some extra protein, you could toss in some walnuts or pecans. I haven't tested this recipe using other types of flour however, so I can't guarantee how they will turn out.

    Ingredients

    • 1 1/2 cups wheat bran cereal
    • 1 cup milk
    • 1 over-ripe banana
    • 2/3 cup brown sugar
    • 1/3 cup vegetable oil
    • 1 egg, beaten
    • 1/2 teaspoon vanilla extract
    • 1 cup all-purpose flour
    • 1 teaspoon baking soda
    • 1 teaspoon baking powder
    • 1/2 teaspoon salt
    • 1/2 cup chocolate chips

     


    Instructions

    1. Preheat the oven to 375 degrees. 
    2. Mix together the bran cereal and milk in a bowl and let sit for 10 minutes to soften.
    3. Mash the banana and brown sugar sugar together in another bowl and add the oil, egg, and vanilla extract.
    4. Add the dry ingredients (flour, baking soda, baking powder and salt) to the bowl with the cereal and mix together.
    5. Incorporate the banana mixture and chocolate chips to the batter, so everything has been mixed together in one bowl.
    6. Spoon roughly 1/4 cup of batter into each muffin tin so they are all even and bake for 15-20 minutes.

      My daughter requested chocolate chip/banana muffins for breakfast, so I was excited to find this recipe where I could sneak some bran flakes in. She loved them and actually requested one for dessert! Was easy to make and came out great. Thanks!
