    Simple Egg Salad

    Simple Egg Salad is great to have on hand for a quick lunch or snack. You can make a big batch and keep it in the fridge for up to four days. This is a base recipe that can be kept simple or spruced up with whatever you prefer.

    What can you put in egg salad?

    This recipe includes mayonnaise, Dijon mustard, salt, pepper and paprika. It also pictures dill and green onion for a touch of green, but these additions are optional. You can add chopped celery or celery seed, capers, relish or pickles as well. Red onion would give it a nice bite or add smoked paprika for a smoky flavor.

    How long do you boil eggs?

    I like to add my eggs to a pot of water right before the water starts to boil. I've found adding a cold egg to rapidly boiling water may cause the it to crack and leak. I typically boil my eggs for 13 minutes for a hard yolk. Let the eggs cool completely before trying to peel it. Running cool water over the egg as you peel it helps the shell come of easily.

    How long do boiled eggs last? How long can you keep homemade egg salad in the fridge?

    Boiled eggs last up to a week according to the FDA in the refrigerator. This recipe is good for up to 4 days in the fridge and makes 4-5 servings, so adjust it accordingly if you don't think you'll be able to eat it all in time!

    How do you keep egg salad sandwiches from getting soggy?

    The best way to keep your sandwich from getting too soggy is to add a layer of lettuce between your bread and salad mixture. If you don't like lettuce, I've found toasting your bread helps keep it's integrity. I also enjoy this egg salad on crackers if you want to skip the bread all together!

    Here are some common questions answered about making egg salad.

    Why is my egg salad dry?

    Egg salad can be dry if you don't have enough mayonnaise in the dish. Also, be sure to not over boil your eggs. This can cause the yolk to dry out and form a gray outer layer.

    Why does my egg salad go watery?

    This happens when there is too much mayonnaise or watery mix ins such as mustard, relish or pickles. Refrigerating the salad does help stiffen the mixture, but if it's still too runny the best thing to do is add more boiled eggs.

    How do you cut eggs for egg salad?

    I just use a chef's knife but you could use an egg slicer or vegetable dicer like this one on Amazon.

    What do you do when you put too much salt in egg salad?

    You can add more mayonnaise, but this could cause the salad to become too runny. When in doubt, add more boiled eggs.

    Ingredients

    Units Scale
    • 8 eggs, chopped
    • 1/2 cup mayonnaise
    • 1 teaspoon Dijon mustard
    • 1/4 teaspoon salt
    • 1/4 teaspoon black pepper
    • 1/8 teaspoon paprika, optional

    Optional Additions

    • 1 tablespoon dill, chopped
    • 1 tablespoon green onion, chopped
    • handful fresh parsley
    • 1/8 teaspoon celery seed

     


    Instructions

    1. Boil the eggs for 13 minutes and set aside to cool before peeling.
    2. Mix all the ingredients together and store in the refrigerator.
