    It's one of those meals that feels a little fun, but is secretly little effort. Everything cooks on one pan, the sauce comes together in minutes, and the best part is cleanup is basically nonexistent. Which, let's be honest, matters just as much as the food itself some nights.

    I've been really into doing stir fry-style meals on a sheet pan lately. It's not traditional… but it works. and the whole family love it. If you need shortcuts, grab bottled teriyaki sauce, microwave rice or pre-cut pineapple.

    Ingredients You'll Need

    For the chicken teriyaki and pineapple:

    Chicken - 1-inch pieces cook quickly and soak up all that teriyaki flavor. You can use boneless skinless chicken breasts, chicken tenders, or boneless skinless chicken thighs.

    Red onion - Adds a little sweetness as it roasts and gives the dish some depth.

    Bell peppers - Bring color, crunch, and a fresh contrast to the sweet sauce. You can use red bell pepper, green or any color.

    Fresh pineapple chunks - It caramelizes in the oven and gives that perfect sweet, tangy balance to the savory chicken.

    For the homemade teriyaki sauce ingredients:

    Cornstarch - Thickens the sauce right on the sheet pan so it clings to everything.

    Warm water - Helps create the base of the sauce and keeps everything from drying out.

    Brown sugar - Adds that classic teriyaki sweetness and helps the sauce caramelize.

    Regular soy sauce - Brings the salty, umami flavor that balances the sweetness. If you use low-sodium soy sauce you may need to add additional salt.

    Honey - Adds a little extra richness and helps round everything out.

    Garlic powder - Gives that savory backbone without needing fresh garlic.

    Ground ginger - Adds warmth and that signature teriyaki flavor. You can use fresh ginger instead too.

    How to Make

    Preheat your oven to 425 degrees. In a small bowl, whisk together all the sauce ingredients until smooth. Add the chicken, onion, bell peppers, and pineapple to a sheet pan. Drizzle with a little olive oil and toss everything together and spread into a single layer.

    Pour the sauce evenly over the top. Roast for 15-20 minutes, stirring halfway through, until the chicken is cooked and the sauce has thickened. Serve with rice, noodles, or cauliflower rice.

    • Swap chicken for shrimp (just reduce cook time slightly)
    • Use canned pineapple if that's what you have on hand
    • Add broccoli, snap peas, or zucchini for extra veggies

    Ingredients

    • 1 lb chicken, chopped into pieces
    • 1 small red onion, diced
    • 2 -3 bell peppers, whichever color you like best
    • 2 cups fresh pineapple, cut into bite size pieces
    • 1 tablespoon olive oil

    Teriyaki Sauce Ingredients

    • 1 1/2 tablespoons cornstarch
    • 3/4 cup water
    • 1/4 cup brown sugar
    • 1/4 cup soy sauce
    • 1 teaspoon honey
    • 1/4 teaspoon garlic powder
    • 1/4 teaspoon ground ginger

    Serve with cooked rice or noodles.


    Instructions

    1. Preheat the oven to 425 degrees.
    2. Mix together the sauce ingredients and set aside.
    3. Place all the ingredients onto the sheet pan and toss with some olive oil.
    4. Pour the sauce over everything and roast for 15 - 20 minutes.
