Easy homemade pimento cheese is a staple recipe for our house. I make a big batch on the weekend to enjoy on sandwiches or as a dip for a snack during the week. I was buying tubs of it at the store before realizing how easy it is to make at home! It's such a great condiment to have handy.
How do you make this recipe?
Start by grating a block of your favorite cheddar cheese. Drain a jar of pimentos to get out the extra liquid. Toss the grated cheddar cheese, a block of softened cream cheese, some mayonnaise, salt, pepper and cayenne pepper in a mixer (or mix by hand!).
How long does pimento cheese last?
This pimento cheese recipe will last in the fridge for about a week. Feel free to cut the recipe in half if you don't think you can eat it all before it expires.

My favorite snack is a scoop of pimento cheese on toast. You could even add a sliced boiled egg on top for some extra protein. I also enjoy dipping bell peppers, carrots or celery in this spread for a lower card option.
This is a base recipe and you could certainly add more vegetables to the dip itself. A jalapeno would add a nice spice to it or you could add bacon on top. Feel free to make it your own!

Ingredients
- 1 (8 oz) block sharp cheddar cheese, grated
- 1 (8 oz) block cream cheese, softened
- 4 oz jar pimentos, drained
- 1 green onion, sliced
- 1/4 cup mayonnaise
- 1/4 teaspoon salt
- 1/4 teaspoon cayenne pepper, optional
- 1/2 teaspoon white vinegar
Instructions
Mix all the ingredients in a bowl. Serve immediately or refrigerate for up to seven days.
