    No-Bake Chocolate Peanut Butter Energy Balls

    These no-bake chocolate peanut butter energy balls are a quick healthy pick me up whether you are running out the door or just in need of a snack before or after dinner. They will cure any sugar craving and last in the fridge for about a week. They are loaded with ground flax seed and chia seeds for some added health benefits and who doesn't love chocolate and peanut butter! You could swap out any other nut butter if you would like too.

    How do you make these no-bake chocolate peanut butter energy balls?

    Mix some instant one minute oats, flax seed, chia seeds, peanut butter, mini chocolate chips and honey (which I forgot to include in the picture) together well. Using a spoon or cookie scoop portion out 11-12 equal size balls.

    Use your hands to create a perfectly circular shape then store them in the fridge.

    When I was making several versions of this recipe I found quick cooking oats provide a much better texture than old fashioned oats. Also, I really like using mini chocolate chips because it makes the balls easier to form.

    Are energy balls healthy?

    It depends on what ingredients you use. This recipe includes ground flaxseed which is high in omega-3 fats, fiber and protein. Chia seeds are an excellent source of omega-3 fatty acids, rich in antioxidants, and they provide fiber, iron, and calcium. Without these ingredients this recipe would basically be a dessert.

    I make this recipe almost every week because I like having quick snacks handy. I also like keeping them around for when I'm craving something sweet. I don't feel as guilty having one or two of these balls because they have some healthy ingredients included.

    Ingredients

    Units Scale
    • 1 cup quick cooking oats
    • 3/4 cup peanut butter | sub almond butter
    • 1/2 cup ground flax seed
    • 1/2 cup mini chocolate chips
    • 1/3 cup honey
    • 1 tablespoon chia seeds
    • 1 tablespoon cocoa powder

    Instructions

    1. Mix all the ingredients together.
    2. Portion out 11-12 balls using a spoon or small cookie scoop and form them with your hands
    3. Refrigerate 10 - 15 minutes to let them stiffen.

    Notes

    Using quick cooking oats are less tough than using old fashioned oats. 

    Store them in the fridge for about a week.
