I love adding it to store bought tortellini or ravioli. It's also great for using up any vegetables that are about to go bad. Full disclosure, you will need a blender for this recipe. And personally, I think it'd be a lot to try to knock this out on a weeknight. I like to do a batch on the weekend and have it ready to go.

I know my kids don't eat nearly enough vegetables, and the mom guilt hits hard some weeks. This sauce started as my attempt to sneak in a little extra nutrition without the battle because if they spot anything green, it's game over. The richness of this sauce makes them happy, and the veggie boost makes me feel a little less guilty. And honestly, I need the extra veggies just as much as they do.

You can customize this recipe pretty easily based on whatever vegetables you have around or prefer. If you've got a super picky eater who won't touch anything green, leave out the zucchini or any green veggies and opt for cauliflower or carrots instead.

This recipe is more of a base, so feel free to swap in whatever veggies you like. The only things you really need are tomatoes, garlic, and onion or shallot since they form the core of the sauce.

How to Make Hidden Veggie Pasta Sauce
Start by roasting all the vegetables. Preheat the oven to 375 degrees. Chop the onion, carrots, and zucchini into large pieces about the same size. Slice the top off the head of garlic but leave it in its wrapper. Keep the cherry tomatoes whole.
Place everything on a large sheet pan, drizzle with olive oil, season with salt, pepper, and Italian herbs. Roast for about 30 minutes, until the veggies are soft and lightly browned.


Let the veggies cool slightly. Transfer them to a blender and squeeze out the roasted garlic cloves. Add the tomato sauce and lemon juice. Blend until smooth and silky. Taste and adjust the seasoning. Once everything is blended, your hidden veggie pasta sauce will be ready to toss with any pasta shape.




If you're batching for later, portion the sauce into freezer containers. Those silicone freezer molds work great for this. If you're making pasta now, pour the sauce into a skillet over medium heat. If it's thick, thin it with broth or water. Taste and adjust again (the extra liquid can dull the flavor). Toss in your cooked pasta and warm everything together for a couple minutes to help the pasta absorb that veggie-packed sauce.
