    Hidden Veggie Pasta Sauce

    I'm always looking for ways to incorporate more vegetables into our diets. This hidden veggie pasta is one of those recipes I can make a big batch of and keep stocked in the freezer for an easy weeknight win.

    I love adding it to store bought tortellini or ravioli. It's also great for using up any vegetables that are about to go bad. Full disclosure, you will need a blender for this recipe. And personally, I think it'd be a lot to try to knock this out on a weeknight. I like to do a batch on the weekend and have it ready to go.

This sauce started as my attempt to sneak in a little extra nutrition without the battle because if they spot anything green, it's game over. The richness of this sauce makes them happy, and the veggie boost makes me feel a little less guilty. And honestly, I need the extra veggies just as much as they do.

    You can customize this recipe pretty easily based on whatever vegetables you have around or prefer. If you've got a super picky eater who won't touch anything green, leave out the zucchini or any green veggies and opt for cauliflower or carrots instead.

    Ingredients You'll Need

    This recipe is more of a base, so feel free to swap in whatever veggies you like. The only things you really need are tomatoes, garlic, and onion or shallot since they form the core of the sauce.

    Olive oil - Helps everything sauté down and adds flavor.

    Onion - Sweetens the sauce and helps everything blend smoothly.

    Garlic - Adds depth.

    Cherry Tomatoes - Adds more complex tomato flavor

    Carrots - Naturally sweet and disappear once blended.

    Zucchini - Soft texture makes it blend like a dream.

    Tomato sauce - Keeps things easy and pantry-friendly.

    Tomato paste - Thickens the sauce and gives that rich flavor.

    Lemon Juice - Brightens all the flavors

    Italian herbs seasoning, salt, and pepper - Simple seasoning that keeps it family-friendly.

    Broth or water - Use this to loosen the sauce to your favorite consistency.

    Pasta of your choice - classic spaghetti is always a hit in our house.

    How to Make Hidden Veggie Pasta Sauce

    Start by roasting all the vegetables. Preheat the oven to 375 degrees. Chop the onion, carrots, and zucchini into large pieces about the same size. Slice the top off the head of garlic but leave it in its wrapper. Keep the cherry tomatoes whole.

    Place everything on a large sheet pan, drizzle with olive oil, season with salt, pepper, and Italian herbs. Roast for about 30 minutes, until the veggies are soft and lightly browned.

    Let the veggies cool slightly. Transfer them to a blender and squeeze out the roasted garlic cloves. Add the tomato sauce and lemon juice. Blend until smooth and silky. Taste and adjust the seasoning. Once everything is blended, your hidden veggie pasta sauce will be ready to toss with any pasta shape.

    If you're batching for later, portion the sauce into freezer containers. Those silicone freezer molds work great for this. If you're making pasta now, pour the sauce into a skillet over medium heat. If it's thick, thin it with broth or water. Taste and adjust again (the extra liquid can dull the flavor). Toss in your cooked pasta and warm everything together for a couple minutes to help the pasta absorb that veggie-packed sauce.

    • Add roasted red bell pepper for a pepper-forward sauce
    • Use cauliflower or butternut squash for extra creaminess
    • Skip green veggies for picky eaters
    • Add a splash of cream and parmesan for a creamy version

    Storage & Freezing

    This sauce freezes beautifully. I like to portion it out into about 1 cup serving per pound of pasta. To cook from frozen, warm a cube of sauce in a skillet while your pasta boils. Add a splash of pasta water to help it melt and loosen up. Taste and adjust the seasoning before tossing in the pasta.

    A roasted vegetable pasta sauce that blends into a rich, smooth marinara kids won't detect. Great for picky eaters, easy to freeze, and ideal for weekend meal prep.


    Ingredients

    • 1 yellow onion, roughly chopped into quarters
    • 1 head garlic
    • 2-3 tablespoons olive oil
    • 1 teaspoon kosher salt
    • 1/2 teaspoon black pepper
    • 1/2 teaspoon dried Italian herbs
    • 1 medium zucchini, roughly chopped into 2" pieces
    • 2 pints cherry tomatoes
    • 2 medium carrots, roughly chopped into 2" pieces
    • 1/2 cup tomato sauce or marinara sauce
    • Juice of half a medium lemon

    Instructions
