Description
This salad is a go to when I crave something healthy and delicious. Load it up with some chicken or shrimp for a hearty dinner salad. My homemade dressing is easy to whip up and so much better than those bottled dressings.
Ingredients

Croutons
- Stale Bread Cubed
- 1 Tablespoon olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Balsamic Dressing
- 1/2 cup olive oil
- 1/4 cup balsamic vinegar
- 1 teaspoon Dijon mustard
- 1 Tablespoon + 1 teaspoon brown sugar
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- pinch of dried oregano
Salad
- 3 cups of romaine lettuce (or a bag), chopped
- 1/2 cup carrots, chopped
- 1/2 cup cucumbers, chopped
- 1/2 cup mushrooms, sliced
- 1/2 cup tomatoes, chopped
- 1/2 cup green bell peppers, chopped
- 1 Tablespoon Kalamata olives, chopped
- 1/4 cup feta cheese
- Cro?tons
- Balsamic Dressing
Optional Ingredients
- Avocado
- Chicken
- Boiled egg
- Parsley
Instructions
- Start by preheating the oven to 350 degrees. Toss the cubed bread in the olive oil, salt, and pepper. Spread the bread onto a baking sheet in an even layer. Bake for 15 minutes.
- Pour the balsamic dressing ingredients (olive oil, balsamic vinegar, brown sugar, salt, pepper, and oregano) into a mason jar. Shake until everything is mixed together. (You can use a whisk to stir the ingredients together if you do not have a jar handy.)
- To build the salad use a huge mixing bowl. Place the lettuce, carrots, cucumbers, mushrooms, tomatoes, green bell peppers, olives, and feta cheese in the bowl. Add any additional ingredient you might like. Then pour the balsamic dressing and croutons into the bowl, and toss everything together.
- Serve immediately.
