Guess what everybody... It's almost swimsuit season (NO!!!). I must admit I have been indulging in one too many late night quesadillas, and I have become a little soft around the edges (as Nolan rolls his eyes, and says I look fine...good boyfriend...).
I don't really care so much how I look, I just want to feel confident. That means it's time to dust off the weights, and start eating lighter. I look at it as an opportunity to be creative with healthy, fresh ingredients...like zucchini!
So I made this Shrimp Scampi with Zucchini Noodles to satisfy my pasta craving. It kind of worked... Next time I am going to do 3/4 zucchini noodles and 1/4 real pasta. I usually have to make a side of real pasta anyway for the boyfriend.
I don't have a scampi recipe, because I have found a recipe from Tyler Florence that needs no modification. It's perfect and simple.
To give credit to his beautiful work I am not posting the recipe, but instead providing a link to the original recipe. Really it's sooo good! My tip is merely to give it a try with some Zucchini! It's low carb and guilt free!
