Roasted Garlic Cauliflower Rice is a surprisingly easy and healthy side dish which can be used it to replace regular rice for a low carb option or just a way to eat more vegetables. This simple side dish is made on a single baking sheet and only takes 30 minutes. You don't even have to "rice" this cauliflower. It would be delicious whole with creamy cloves of roasted garlic mixed throughout.

How do you make roasted garlic cauliflower rice?

Start by cutting a head of cauliflower into florets, cut the long stem side off of a head of garlic and toss everything in olive oil, salt and pepper on a baking sheet. Bake at 400 degrees for 25 minutes.

After everything is roasted carefully squeeze out the soft garlic cloves from their wrapper. Using a potato masher, mush the garlic and cauliflower into small "rice" size pieces. You can store this dish in the fridge for 3-4 days.

How do you make cauliflower rice not soggy?

Roasting the cauliflower draws out a lot of the moisture which causes cauliflower rice to become soggy. It also gives you some nice crispy bits where it's been browned on the sheet pan.

Does cauliflower rice taste like rice?

No. Nothing can replace the starchy goodness of rice. However, cauliflower rice does give us the same texture as rice and is a refreshing option for a lighter meal. The roasted garlic in this recipe really provides a ton of extra flavor to your standard cauliflower rice.

Can you bake cauliflower rice in the oven?

Yes. I might argue it's the best way to cook cauliflower rice. Roasting helps dry out the cauliflower and intensifies it's flavor.

Ingredients

Scale
  • 2 heads cauliflower, roughly chopped
  • 1 head garlic, stem chopped off
  • 3 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Preheat oven to 400 degree.
  2. Toss cauliflower, garlic, olive oil, salt and pepper on a baking sheet.
  3. Roast for 25 minutes then let cool slightly before carefully removing the garlic from it's wrapper.
  4. Smash everything together using a potato masher until it's the consistency you like.
