A Reuben Sandwich is a delicious and easy dinner idea. It's a great way to use up leftover Crockpot Corned Beef or you can grab some sliced corned beef at the deli.

- 4 slices rye bread
- 1/4 cup Thousand Island Dressing
- 8 slices swiss cheese
- 1 lb corned beef, sliced thin
- 1/2 cup sauerkraut, dried
- 2 tablespoons butter
Homemade Thousand Island Dressing
- 1/2 cup mayo
- 1/4 cup pickles, dried and chopped
- 2 tablespoons ketchup
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspon onion powder
- 1/4 teaspoon paprika
- dash of cayenne pepper, optional
- 1/2 teaspoon sugar
Instructions
- Start by laying out your bread and place your swiss cheese on top of each slice of bread.
- ?Add the Thousand Island dressing, sauerkraut, and corned beef on top of the cheese.
- Melt the butter in a skillet over medium heat and toast both sides for five minutes and serve!
