When you're short on time but craving the bold and vibrant taste of Mexican cuisine, this quick Mexican chicken marinade is your ticket to a delicious meal in no time.

Units Scale
  • 1 lb chicken
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1 teaspoon kosher salt
  • 1 lime, juiced
  • 1/2 cup neutral oil
  • 1/2 cup cilantro, optional

Mix all the ingredients in a bowl or plastic bag and marinate in the refrigerator for up to 3o minutes. Cook the chicken using your preferred method and note the thickness of the chicken will determine the cooking time. It's best to use a meat thermometer to make sure the chicken has an internal temperature of 165 degrees for safe eating.

  • Don't marinate any longer than 30 minutes because the lime juice will start to cook the chicken and give it a weird texture.
  • This chicken can be pan fried, roasted, or grilled. Visit Thinly Sliced Chicken Breasts for basic instructions on how to cook chicken breasts.
  • Use this chicken for fajitas, quesadillas, burrito bowls or just over rice!
