Description

This easy basmati coconut rice recipe is a simple way to mix up your side dish staples. The richness of the coconut milk give this rice an addictive flavor. 


Ingredients

  • 1 (13.66 oz) can unsweetened coconut milk, full fat
  • 1 cup water
  • 1 1/2 teaspoon salt
  • 1 cup basmati rice
  • 2 green onions, chopped

Instructions

  1. Bring 1 can of full fat unsweetened coconut milk, 1 cup water and 1 1/2 teaspoon of salt to a boil in a medium pot
  2. Stir 1 cup of basmati rice into the coconut milk, cover with a lid, turn the heat to low and cook for 25-30 minutes until all the liquid is absorbed
  3. Garnish with chopped green onions
