    Easy Basmati Coconut Rice

    This easy basmati coconut rice recipe is a simple way to mix up your side dish staples. The richness of the coconut milk give this rice an addictive flavor. Does coconut rice taste like coconut? Yes, it does have a subtle coconut flavor which compliments the nuttiness of the basmati rice. It's important to grab full fat unsweetened coconut milk. Otherwise this rice will be way to sweet!

    How do you make this rice?

    1. Cook the coconut rice by bringing one can of full fat unsweetened coconut milk, 1 cup water, and 1 1/2 teaspoon of salt to a boil in a medium pot
    2. Stir 1 cup of white rice into the pot, cover with a lid, turn the heat to low and cook for 25-30 minutes until all the liquid is absorbed

    So easy and delicious!

    What can you eat with Coconut Rice?

    I love paring this rice with salmon dishes or any other type of seafood. We also serve this alongside our Grilled Pineapple Chicken Kabobs. You could also use it for all kinds of stir fries!

    Description

    Ingredients

    Scale
    • 1 (13.66 oz) can unsweetened coconut milk, full fat
    • 1 cup water
    • 1 1/2 teaspoon salt
    • 1 cup basmati rice
    • 2 green onions, chopped


    Instructions

    1. Bring 1 can of full fat unsweetened coconut milk, 1 cup water and 1 1/2 teaspoon of salt to a boil in a medium pot
    2. Stir 1 cup of basmati rice into the coconut milk, cover with a lid, turn the heat to low and cook for 25-30 minutes until all the liquid is absorbed
    3. Garnish with chopped green onions

      Yum, yum! Green onions are really needed. Served this with Chinese BBQ pork cooked in my Air Fryer perfect combo. Thanks for the easy delicious recipe!

      Prior to the recipe card:
      How do you make this rice?
      Cook the coconut rice by bringing two cans of full fat unsweetened coconut milk, 1 cup water, and 1 1/2 teaspoon of salt to a boil in a medium pot.

      The recipe card says 1 can...which one is the typo or does it depend on the grain of rice used you need more liquid?
