Looking for the best breakfast casserole recipe? This Croissant Breakfast Casserole with Ham, Cheese and Spinach is definitely a contender. The beautiful thing about it is it's totally customizable to whatever you have on hand. Don't have ham? Leave it out or add cooked bacon or sausage. Want more veggies? Add some cooked peppers, onions and mushrooms. Want to try other cheeses? Go for it! Feta, gruyere, swiss or fontina would all be delicious. As long as you keep the base recipe the same, you can get creative with all of the extras.

How do you make this Croissant Breakfast Casserole?

First, preheat your oven to 375 degrees and grease a 9x13 pan very well using melted butter or vegetable oil. Lay out your croissants on the bottom of the pan. Sprinkle on all of your fixings, then pour an egg, milk, salt and pepper mixture over the whole pan. Bake for 25-30 minutes.

You can also prepare this casserole the night before and keep it in the fridge to let the egg mixture soak into the croissants. Make sure to refrigerate any leftovers. This casserole will last 2-3 days in the fridge after you bake it. I just microwave my leftovers 1-2 minutes to reheat them. This breakfast casserole would be delicious paired with a fresh fruit salad. Also, I would totally use this recipe as a breakfast for dinner situation!

Where do you find croissants? Our local Kroger and Publix have them in the bakery section, but the best premade croissants that I have found are at Costco. Don't be afraid to tear the croissants to make them fit the pan either if you find they are too big or leave big gaps.

Ingredients

  • 1-2 Tablespoons oil or butter for greasing pan
  • 6-8 croissants
  • 1 cup fresh spinach
  • 2 cups cheddar cheese, shredded
  • 1/2 cup Parmesan cheese, grated
  • 2-3 slices ham, cut into small pieces
  • 12 eggs
  • 1 cup milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 green onion, chopped

Instructions

  1. Heat your oven to 375 degrees and grease a 9x13 pan very well using melted butter or oil.
  2. Lay out your croissants on the bottom of the pan and sprinkle the spinach, ham and cheeses on top.
  3. Beat the eggs, milk, salt and pepper together and pour the mixture over the whole pan.
  4. Bake for 25-30 minutes.

Notes

You can do steps 1-3 the night before and bake it the next morning.
