So one of my best friends is from Buffalo, New York, and I never really knew how big of a deal St. Patrick’s day was until I met her. She tells me they have parades and the whole shebang. Well lets just say I will take any excuse to eat some corned beef and cabbage! The easiest way to make this classic is in the Crock Pot.
If I am being honest, I should make two of these corned beef briskets at once because we love it so much. In my opinion I like the leftover dishes more than the original dinner!
I make Corned Beef Hash with a Poached Egg and Reuben Sandwiches with the leftovers. Oh man are they delicious.
Make sure you get the right brisket at the grocery store…
Then all you need is a head of cabbage, red potatoes, carrots, onion, and a beer. Throw everything in a crock pot and cook on high for 8 hours.
Yummy. Start this recipe before you go to work, and like magic it’s ready to eat when you get home!

Ingredients
- 1 Corned beef Brisket
- 3 carrots
- 1/2 head cabbage cut into wedges
- 3 medium red potatoes, quartered
- 1 medium onion, chopped
- 4 cups water
- 1 beer, optional
- Seasoning packet that comes with the brisket
Instructions
- Throw all of the ingredients into an Crockpot. Cook for 8 hours on high.
