Description
This creamy mushroom chicken is a delightfully simple recipe that requires little time to make. If you love mushrooms, you'll die for this creamy pan sauce.

- 1 lb chicken breasts
- 1/2 teaspoon Kosher salt
- 3 tablespoons butter
- 1 medium shallot or small onion, chopped
- 2 cups mushrooms, sliced
- 1 tablespoon flour
- 1/4 cup white wine, optional
- 1/2 teaspoon Dijon mustard
- 1 tablespoon heavy cream
- 1/2 cup chicken broth
- 1/2 teaspoon Italian seasoning
Instructions
- Sprinkle salt over chicken, melt butter in a large skillet over medium high heat, and sear both sides over the chicken until the internal temperature reaches 165 degrees. Depending on how thick you chicken breasts are, this step could take anywhere from 10-20 minutes.
- Remove the chicken from the pan, then toss in the mushrooms and onion for 3-4 minutes until the onion becomes soft.
- Stir 1 tablespoon of flour in with the mushrooms and onions until it is completely absorbed.
- Pour and mix in the white wine over the mushrooms and let simmer for 2-3 minutes until the wine has reduced.
- Mix the Dijon mustard, heavy cream, chicken broth and Italian seasoning thoroughly with the mushrooms until the sauce is combined.
- Simmer for 4-5 minutes until the sauce has thickened. Add the cooked chicken back to the pan along with any juices and gently toss everything together.
Notes
The flour serves as the thickener of the sauce so if you plan on leaving it out it will still be delicious, just a little runny.
If your sauce gets too thick simply add more broth and heavy cream.
