    This Baked Buffalo Chicken Dip made with Franks sauce is a favorite on our house for any gathering. Honestly, I'll whip this up anytime , no gathering required, it's so addicting. I like using Franks RedHot sauce because in my opinion, it's the best hot sauce for this recipe (not sponsored, just love!). It has the perfect spicy to vinegar to flavor ratio.

    What is buffalo chicken dip made of?

    So I feel like everyone likes their dip a little different, and this recipe leaves a lot of room for modifications. For example, we love blue cheese and blue cheese dressing, but I found we prefer only using ranch for our dip. Whatever dressing you prefer, go for it! Just be sure to keep the same meat to liquid ratio, otherwise your dip may become too runny.

    This chicken dip is a mixture of shredded chicken, cream cheese, cheddar cheese, Franks hot sauce and ranch. Mix all the ingredients together and bake! For a low carb option, I love eating this dip with celery. It's also good on tortilla chips or cracker. For a party, I'll serve all of the above!

    What kind of chicken do you use for this dip?

    For a really easy buffalo chicken dip with Franks, grab a rotisserie chicken from the store and shred it up. One whole chicken is enough meat for this baked buffalo chicken dip. You could also use two cans of chicken, but I'm not really a fan of canned chicken. If I don't have access to a good rotisserie chicken (or don't want to make a special trip to the store for it,. I'll roast some chicken breasts.

    Toss 1lb of chicken breasts with 1 tablespoon of olive oil, 1/2 teaspoon salt and a few cracks of black pepper. Roast at 400 degrees F for 30 - 35 minutes (depending on how big the breasts are). Be sure to cook it to at least 165 degrees F before shredding. A quick shredding hack is to use your paddle attachment if you have a standing mixer. Just throw those hot chicken breast (and any juices) straight in the mixer and beat on low for a few seconds. You could actually go ahead and mix the entire dip in that stand mixer.

    Ingredients

    Buffalo Chicken Dip

    • 2 cups shredded chicken*
    • 1 package cream cheese (8oz), softened
    • 1/2 cup ranch dressing
    • 3/4 cup Franks hot sauce
    • 1/2 cup shredded cheddar cheese
    • 1/4 teaspoon garlic powder
    • 1/4 teaspoon cayenne pepper
    • 1 bunch celery, cut into sticks for serving
    • tortilla chips, for serving

    Roasted Chicken Breast for Shredding (if not using rotisserie chicken)

    • 1 lb chicken breast
    • 1 tablespoon olive oil
    • 1/2 teaspoon kosher salt
    • 14 teaspoon black pepper

    Instructions

    Buffalo Chicken Dip

    1. Heat oven to 400 degrees.
    2. Combine all the ingredients, shredded chicken, cream cheese, ranch dressing, Franks, cheddar cheese, garlic powder, cayenne pepper, until everything is evenly mixed together and there are no cream cheese lumps.
    3. Transfer to an oven safe dish and bake for 15 minute until the dip is bubbling and serve immediately.

    Roasted Chicken Breast for Shredding (if not using rotisserie chicken)

    1. Preheat oven to 400 degrees.
    2. Toss the chicken with olive oil, salt and pepper.
    3. Roast for 30 - 35 minutes or until the internal temperature reaches 165 degrees F
    4. Let cool a little before shredding.

    Notes

    *1 rotisserie chicken shredded works perfectly for this recipe, but I've also included how to cook you own chicken for shredding as well. I use both methods depending on what I have on hand.

    It's really important to use softened cream cheese, or the cream cheese will be lumpy. If your like me, and never plan ahead, you can microwave the cream cheese for 20 - 30 seconds to soften it up.

    Prep time represents using already prepared chicken, if you're roasting, add an additional 30 minutes.
