What an exciting week! I’m ready for some pumpkin! We had my sister’s bridal shower last weekend, and it was a lot of fun.
The weather here in Nashville has started to change! Fall is my favorite season (I know I am not alone). I love the crisp air, and the apples. I love apples.
I love that it’s football season, and I get to make tail gate food. I love that the holidays are around the corner. Fall gives me energy and excitement.
It’s like a new beginning. Anyways… In the spirit of fall I made this Healthy Pumpkin Spice Bread.
I mixed pumpkin puree into a nutty bran mixture, and tada! It turned out beautifully. There is nothing like slathering butter on a piece of bread fresh out of the oven.
To jazz it up I topped this warm pumpkin loaf with chopped pecans and organic sugar crystals (I was too lazy to make a streusel).

Ingredients
- 1 1/2 cups wheat bran
- 1 cup buttermilk
- 1/2 cup pumpkin puree
- 1 egg
- 2/3 cup brown sugar
- 1/2 teaspoon vanilla extract
- 2 tablespoons flax seed, ground
- 1 cup whole wheat flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon pumpkin pie spice
- 1/2 cup chopped pecan
- 1/4 cup organic sugar (optional)
Instructions
- Preheat the oven to 375 degrees. Grease a bread pan and/or line with parchment paper.
- Mix the bran and buttermilk together and let rest for 10 minutes.
- Beat the pumpkin puree, egg, sugar, vanilla, and bran mixture together in a large bowl. In a separate bowl mix together the flour. baking soda, baking powder, pumpkin pie spice, and salt. Pour the dry ingredients into the wet, and stir until combined.
- Pour into the prepared bread pan. Top the batter with chopped pecans and sugar.
- Bake for 25-30 minutes, or until a toothpick/knife inserted into the center comes out clean.
- Cut a big piece, cover it in butter, and enjoy! (I am to impatient to let it cool!)
