  1. Place the halved potatoes, 8 cups of water, and 1 teaspoon of salt in a medium pot on the stove. Bring the water to a boil. Boil the potatoes for 20 minutes or until the potatoes are fork tender (time varies depending on how big the potatoes are).
  2. Once the potatoes are finished turn of the burner, and strain out the water by dumping the potatoes into a colander. Place the empty pot back on the hot burner. Then place the cooked potatoes back in the pot. Let the potatoes sit for 1-2 minutes. By placing them back into a hot pot, most of the water soaked into the potatoes will evaporate.
  3. Add the melted butter, milk, salt and pepper to the potatoes, and mash everything together until smooth. You can add more slat and pepper to taste.

Notes

For a lighter version cut the butter in half, and just use 4 Tablespoons. Also, use 2% milk instead of whole milk.
